Ok hi there! my name is Amy. I'm starting to poke my face in here and there on Mighty. I'm extremely motivated (finally) to get my picky self eating a few healthier options. I was raised to at least try one bite of everything. if I didn't like it, no harm no foul. I ate and liked it all. With the exception of pickled pigs feet ( yup! ate it and loved it! although I don't want to eat it now), we ate pretty normally for Americans. We ate most all veggies though and a side salad every meal. But lots of processed food too. My mom was a great "box" cook with several other dishes home cooked. But I was raised to try things. When things like couscous and quinoa started gaining a lot of attention, I developed what my dad called a food prejudice. He'd say, "how can you know if you like it if you don't try it?" Because it's healthy and looks funny and just no. 😂 But, I really do want a healthier and I think I'm ready to bite the bullet and try one or the other. Which one do you recommend?
Sooooo. . .we grow broccoli in the winter in SoCal. I never want to waste any of the harvest. I found an easy recipe for Roasted Broccoli Stems. My husband prefers steamed florets, and cuts away any stem parts on those. His comments: " Those are really good. They could be a side all by themselves" ...

I tried the sheet pan Hawaiian chicken today. My husband and I both thought the ratio of chicken to the other stuff was just right. the bell peppers didn't add much flavor. Has anyone tried substituting a poblano or Anaheim pepper for one of the bell peppers?
Tried the sheet pan Hawaiian chicken today. The pineapple tasted too salty, I didn't add rice to complete meal. Next time, I'll try fresh pineapple.
Have to note because they were so good - had some leftover Easy Green Beans we made following the recipe on Mighty Health - great when made fresh & maybe even better as leftovers. Made these a bunch of times - always quick easy, simple ingredients & very good!

I did some breakfast and lunch meal prep for this week. The first one is a recipe I got from a Instagram user. It is called Cajun hashbrown breakfast bowls. I added spinach and cottage cheese to the eggs, used Turkey sausage links, and hashbrown potatoes.

I made breakfast Sammies. I got this from someone on Instagram. She has great low calorie recipes. I used 6 pieces sara lee delightful bread, healthy multi grain, 6 eggs, 3 pieces of cheese, and 4 pieces of bacon.
I made chocolate banana pudding for my snack. I made the banana pudding with 2% milk, and the chocolate pudding with Fairlife core power chocolate protein shake. Both puddings were sugar free. 8 servings each serving had:
