Benefits of Low Carb Diet for Seniors
Getting older causes our bodies to process nutrients differently. In particular, your body’s ability to manage blood sugar changes. Many people become more sensitive to carbohydrate-rich foods, causing spikes and dips in blood sugar. This may contribute to weight gain, risk for type 2 diabetes, and heart disease. Plus, having irregular blood sugar just doesn’t feel great. People who experience a lot of blood sugar swings often say that they feel sluggish, irritable, fatigued, or even depressed. This makes it even harder to reach your weight loss goals and maintain an energetic, vibrant life.
Is Low Carb the Same Thing as Keto?
One of the biggest nutrition changes you can make is to switch to a low carb diet or keto diet. A low carb diet includes lean protein and healthy fats. These macronutrients help you to feel fuller longer. They also help to regulate your blood sugar, preventing crashes or energy swings.
The keto diet is a specific type of low carb diet that focuses on limiting carbs as much as possible. Instead, people following a keto diet eat lots of protein and healthy fats to give their body energy.
This chicken stew is an easy low carb dinner idea, and it's keto diet friendly. It contains plenty of fiber-rich vegetables to prevent digestive issues. Plus, those veggies will keep you feeling full and promote weight loss.
How to Make Low Carb Chicken Stew
To make this low carb chicken stew, begin by collecting your ingredients. The star of this stew is its protein source: boneless, skinless chicken thighs, which stay extra moist while cooking and have great flavor.
Gather Up These Ingredients:
2 tablespoons olive oil
2 pounds boneless, skinless chicken thighs (about 2 thighs), cut into 1-inch chunks
Kosher salt and freshly ground black pepper, to taste
1 medium sweet onion, diced
3 carrots, peeled and diced
2 celery ribs, diced
3 cloves garlic, minced
1 tablespoon tomato paste
½ cup dry white wine
2 ½ cups chicken stock
4 sprigs fresh thyme
2 bay leaves
1 pound red potatoes, cut into 3/4-inch chunks
2 tablespoons chopped fresh parsley leaves
Instructions
Begin by heating the olive oil in a large pan or Dutch oven. Add the cubed chicken, season with salt and black pepper, and stir for 3-4 minutes until chicken is browned. Remove the chicken from the pan and keep on a plate.
Then, add the chopped onion, carrots, celery, and garlic. Saute until cooked, another 4-6 minutes. Once the vegetables are fully cooked, add 1 T. tomato paste and 1/2 cup dry white wine. The wine is optional, so if you do not wish to use it, simply substitute an extra 1/2 cup of chicken stock. Cook for 1-2 minutes until the alcohol from the wine has burned off.
Next, add your reserved chicken cubes, diced potatoes, thyme, and bay leaves. Cover with 2 1/2 cups of chicken stock. Whenever possible, use low-sodium chicken stock, as this helps to regulate blood pressure. Cook until the potatoes are cooked through, about 8-10 minutes. Serve and enjoy
