Ingredients: 

  • 1 cup mashed sweet potato (mash with a fork or potato masher)

  • 2 eggs

  • 1/4 cup of honey

  • 1/4 cup of butter (unsalted) or coconut oil

  • 1 tsp vanilla extract

  • 2/3 cup of almond flour

  • 1/4 cup of unsweetened cocoa powder

  • 1/4 tsp baking powder

  • 1/4 tsp salt

Directions:

  1. Preheat the oven to 350 degrees F. Cut an 12” x 8” square of parchment paper, using it to line an 8” x 8” pan. Leave a 2-inch overhang on two sides.

  2. Add the mashed potatoes, eggs, honey, butter, and vanilla to a medium bowl. Whisk well to combine. Mixture should be smooth.

  3. Sift the flour, cocoa powder, baking powder, and salt into the wet ingredients. Stir until fully combined.

  4. Pour the batter into the prepared pan. Smooth evenly with a spatula.

  5. Bake for 28-30 minutes or until the center is set. Check doneness by inserting a toothpick, which should come out clean.

  6. Let fully cool in the pan before slicing and serving. 

Modifications

This recipe is very robust to substitutes. For a vegan alternative, swap eggs for egg substitute powder or ground flax. In lieu of almond flour, swap any kind of oat flour, cassava flour, or coconut flour.
