Sorry in advance for the lengthy post. Continuing to find ways to replace pasta with healthier alternative. Tonight was zucchini and yellow squash zoodles with Bolognese sauce. There are a lot of versions of the sauce. One that even includes milk and white wine. I went with what my taste buds and brain thought might be good. I did combine ground beef with one sausage (no case). Added onions, garlic, carrots, mushrooms, red wine, and used a jarred sauce because I didn't have any plum tomatoes (canned or otherwise). Mushrooms are not traditional, but you can use them instead of the beef. My mushrooms were beautiful. I bought them to make pizza but am waiting to eat pizza again and did not want to waste them. And of course you could leave out the wine, but it really gives depth to red sauce - especially when given time to cook down. I layered the fettuccine zoodles, then cheese, then sauce, so that the sauce could melt the cheese. So far zoodles has been a success. Coach Diane suggested that I pick one thing to change. I have 3 for the next few months. Patience for reaching my goal. Mindfulness: things like doing 1 thing at a time - especially when eating. It also includes planning meals. Number 1, is replacing healthier alternatives as often as possible for pasta, rice, etc. without committing 100% alternative. If I went 100%, I would feel I'm being denied and couldn't do it. It's been very, very hard for me right now to not make pizza. I make a great wood fire oven pizza. New Haven/Napolitan style.
