My son and his wife have been eating vegan for a couple of months in an effort to help her with her Type 1 diabetes. they came for dinner tonight and I made a recipe that turned out to be delicious and full of good fresh vegetables and fruit also. Trying to eat greener in the morning. this recipe was in my newspaper for greens and eggs. Fast and simple. Stir fry some fresh greens, cabbage, onion and peppers. Season as you like with garlic, pepper and cinnamon. Add an egg and finish as you like. I added a little manderine orange too.
