Jeanne S Judy are usually cook everything from scratch. But this time I did not. I bought a box falafel mix. I was surprised to see that it had matzoh meal in it also. Not just chickpea. I added some ginger a little more garlic. Spices seemed OK. Sometimes I bake falafel, sometimes like air fry it m, and sometimes I actually fry it. This time I added one egg and fried it in an iron skillet. It does not call for egg. I just used a light Greek vinegrette: red wine vinegar and lemon juice. Some salt and pepper, no seasoning. Haven't quite figured out Greek seasonings yet. cucumbers were in the salad. But you can just cut up cucumbers, some yogurt, garlic, salt and pepper to make the tzatziki. For the drizzle, I added some of the vinaigrette to it. Then I just broke up the falafel pieces on top of the salad and drizzled the tzatziki.
