Health Coach Answers “How do I make some of my favorite summer foods low carb.” For the next few weeks I will highlight cooking tips and swaps to make these foods more nutrient dense, low carb and MIGHTY FRIENDLY. Let's talk about Pasta! If you are making a pasta ‘salad’ or a pasta bake for a cookout, other event or for yourself try these simple swaps. 1.Vegetable noodles are my top recommendation. They will not only lower the level of processed items on the ingredients list but give you a nice bump in fiber and lower the carbohydrates more than half. - cooking tip: using fresh spiralized vegetables is the way to go! Some of the best ones are zucchini, broccoli stems, beets, butternut squash, carrots, sweet potato, summer squash, turnips and cabbage. 2. Palmini noodles. These come in a can or package and are made from hearts of palm. -cooking tip: take out of the can or package, rinse and boil for a few minutes in water then add to any dish or sauce. 3. If you are wanting a store bought pasta, focus on lowering the level of processed items on the ingredients list. Member favorites are Banza chickpea pasta and miracle noodles.
