I’m back for another Health Coach Answer on “How do I make some of my favorite summer foods low carb.” For the next few weeks I will highlight cooking tips and swaps to make these foods more nutrient dense, low carb and MIGHTY FRIENDLY. This week is all about CHIPS! 1. The best low carb option that will also add some fiber to your day is to try homemade VEGETABLE CHIPS. Some of the member favorites are zucchini, kale, jicama, sweet potato, broccoli (using the stems), and beets. A. cooking tips- try various cooking methods to find your favorite. Dehydrating will give the best crunch but also takes the longest. Air frying and baking are the most common ways to make veggie chips. B. Be sure to cut as thin as you can make them and coat with olive, avocado or coconut oil. 2. Another option is cheese chips. Take any flavor of cheese such as parmesan, mozzarella, swiss, pepper jack, or cheddar and bake. A. cooking tip- Keep your cheese piles small and spaced apart. Watch very carefully as ovens will vary for cooking time (400 degrees for 6-8 mins is average). Store these in an airtight container in the fridge. 3. Last is the highest carb option, of homemade tortilla chips (from scratch or with low carb tortilla). 4. Try adding low sodium or sodium free flavors to any of these options. Some examples of seasonings are nacho, Italian, everything, ranch, salt and vinegar, chili lime, taco seasoning, garlic, sea salt, and pepper.
